Fresh Hope – Day 33

I hope you’re having a wonderful Christmas break!


Here’s a favorite breakfast that I cook once in a while for the family. It’s a typical American style breakfast that was given to me by a good friend in the states.


As I’m probably going to cook it at home on New Years morning, I thought today would be a good time to share it so that you can get the ingredients in.




Ingredients for 3-4 servings:


Tin of sliced apples (or slice and cook your own)

2oz butter

2 tablespoons brown sugar


Ground cinnamon

2 eggs

½ a pint of milk

2 tablespoons granulated sugar

Sliced white bread (thick and stale is best)


Pack of streaky bacon



Place apples in a small saucepan – add brown sugar and butter. Simmer until the juice turns into a nice, sticky syrup.


Whilst the apples are cooking, whisk eggs, white sugar and milk together with a fork. Add tsp of cinnamon and whisk in.


Place the mixture in a shallow dish.


Start to grill or fry bacon until crisp.


Whilst bacon is cooking, take a large frying pan and get hot.


Add a knob of butter. When it starts to froth, take a slice of bread and dip in the egg mixture for around 5 seconds on each side. Quickly place in frying pan and cook for around 1-2 minutes on each side until nicely browned.


Cut bread through into 2 triangles and plate up. Spoon hot apples onto plate and top with crispy bacon.
