Today, Fresh Hope turns to fresh Christmas chocolate brownie.
Simple, yet great recipes should be passed around, so today I’m sharing a favourite that will be a hit with all the family, especially when it comes straight out of the oven.
Many recipes can be too complicated for most people to try…here’s one thats not!
Rich chocolate brownie cake – serves 8-10 (or 4-5 in our house!)
125g butter at room temp
250g caster sugar
2 large eggs, lightly beaten
Pinch of salt
1 teaspoon of vanilla extract
125g plain dark chocolate.
125g plain flour
Grease an 8 inch round cake tin and line with foil or greaseproof paper.
Pre-heat the oven to 350°F or 180° C
In a large bowl beat the butter until light and fluffy, add the sugar and beat well until blended.
Add the eggs and vanilla and beat again until well blended.
Add the salt and a third of the flour and beat well. Add another third of flour and beat, and then the final third and beat.
Break or grate the chocolate into a bowl and melt over hot water or carefully in microwave. Leave to slightly cool and then add to cake mixture and beat until well blended and creamy.
Pour into cake tin and smooth
Bake for 20-25 mins until cake is puffed up and is cooked in the middle.
Leave to slightly cool and then turn out onto a plate.
Dust with icing sugar and serve warm.
